When building a 4 or 5 star hotel, one strategic decision appears early: how to handle food. You can outsource it through catering. Or you can build a real kitchen with a great chef.

Both serve food, but they represent very different strategies.

  • Catering delivers ready made meals. Easy to start, but limited flexibility.

  • A kitchen and chef create a culinary identity. The menu evolves and the restaurant becomes part of the hotelโ€™s brand.

  • For a small hotel, catering works perfectly.

  • For a luxury hotel, food becomes part of the experience and requires real infrastructure.

Payments in commerce are going through a similar shift.

Just like a hotel kitchen, this infrastructure allows the merchant to design the experience instead of consuming it. The real question is no longer just how to accept payments. It is how to design the payment architecture for the next decade.
